Paula’s Delicious Tiffin Delights

Continuing our ‘Tailgate Tucker’ series, here is a recipe from one of our leaders, Paula that always goes down well and rather quickly by our volunteers at teatime. Hope you will enjoy these delicious treats after a hard days work outside tackling the weeds.

Another Tailgate Tucker recipe from one of our leaders Paula, which just about makes enough for our hungry and cold Fringe volunteers. Yum yum.

  • 200g Digestive biscuits
  • 100g Butter
  • 50g Raisins
  • 100g Dark chocolate (72% cocoa) or to taste
  • 3 Tbsp Golden syrup
  • 2 Tbsp Cocoa powder

1. Line or butter an 18cm sandwich tin. Seal the biscuits in a strong plastic bag and bash into uneven crumbs with a rolling pin (which is very therapeutic by the way).

2. Melt the butter and syrup in a pan, stir in the cocoa and raisins, then stir in the biscuit crumbs, mix well. Spoon into the tin and press down firmly.

3. Melt the chocolate (microwave on medium) for 1 minute, then 30 seconds till it is melted and smooth. Spread over the biscuit base and chill the mixture in the fridge for 1/2 hr.

4. Variations on the recipe are to double the recipe and put the mixture in a square tin. I mostly do this as it seems to disappear quickly! You can also drizzle some white chocolate over the top as it just looks pretty!
